Sainsbury's ingredients
- 1 Onion
- 500g Beef mince (12% fat)
- 400g Can chopped tomatoes
- 400g Can red kidney beans
- 2x 250g Microwave rice basmati
- 1 Avocado
Get prepped
- Finely chop the onion.
- Drain and rinse the kidney beans.
- Halve the avocado and remove seed
1. Get the base started
- Heat 1 Tbsp of oil in a wide, lidded pan over a medium heat and add the onion. Cover with a lid and let it cook for 3 mins to soften, stirring occasionally.
- Turn up the heat and add the beef mince. Break it all up with a spoon and fry for 4-5 mins to colour it all over, until no pink remains.
- Turn the heat down and add the
1 Chipotle spice mix. stir well.
2. Develop the flavours
- Mix in the
2 Chilli con carne stock, then turn the heat up to medium and pour in the chopped tomatoes and fry for 5 mins.
- Add 200ml water (just fill up your empty tomato tin to halfway) and bring it to the boil, then turn it down to bubble away for 2 mins, stirring occasionally.
- Tip in the kidney beans, cover with a lid and cook for 5 mins over a medium heat, stirring occasionally.
- Take off the lid, then add the
3 Cocoa chilli paste and cook for 2 more mins.
Tip
Get the heat going when the chopped tomatoes go in to really fry them. off. Listen for that sizzle!
3. Meanwhile heat the rice
- Heat the rice according to pack instructions, and keep warm. Check food is piping hot and cooked thoroughly. All cooking appliances vary. This is a guide only.
Serve!
Cut the avocado into slices then serve the Chilli over rice with your avocado slices on top.
You'll need some oil from your cupboard.
